Egg-free pasta is quick to make and easy to cook al dente. It's perfect with dish and simple, fresh sauces (or just a little bit of olive oil). Dough for standard pasta has a very different texture than egg pasta: it is smoother, more elastic. Egg free, it is also paler. Egg-free pasta cooks in a minute, so have the sauce ready.
