Coconut Pear Dessert
 
 
This recipe has been created for the specific ingredients shown. Very little coconut flour is required in comparison with standard recipes. Don't worry if the oil separates from the rest of the ingredients, simply mix and the cake will bake beautifully. Serve as a dessert rather than for afternoon tea.

Ingredients
  • 500 grams of pears peeled
  • 50 gr coconut flour
  • 100 gr coconut sugar
  • 50 gr coconut oil
  • 1 tsp gluten free baking powder
  • 4 eggs
  • vanilla
Instructions
  1. Pre-heat the oven to 170C.
  2. Cut your pears into quarthers or eighths depending on their size. Place into a baking dish. (I used a ceramic one)
  3. In your food processor, mix the oil and sugar together. Mix well
  4. Add the eggs and vanilla. The mixture will be very liquid.
  5. Add the coconut flour and baking powder.
  6. Pour the mixture over the pears and place in the oven.
  7. After 10 minutes the oil will have separated from the other ingredients. Mix everything back together again and leave to bake.
  8. Baking time is approximately 30 minutes. This will depend on your oven. It will have risen like a standard cake and be a lovely golden brown when ready. Check that the mixture is set with a skewer or tooth pick.
  9. Serve warm.
