Marvelous Maple Pork Chops

A simple dish to make, just allow it sufficient time to cook long and slow. Seek out the very best pork you can find, preferably local. Choose 100% maple syrup too. Serve with mashed potatoes and green vegetables.

Ingredients
  • 1 large pork chop per person
  • 1 dessertspoon maple syrup per chop
  • ½ teaspoon smoked paprika per chop
Sauce (for 2 chops)
  • 200 ml white wine
  • Salt
  • Pepper
Instructions
  1. Slather each pork chop with the maple syrup and smoked paprika and leave for a few hours to infuse the flavours.
  2. Preheat the oven to 160°C.
  3. Place the chops and any remaining marinade into an oven proof dish and add ½cm water.
  4. Roast for approximate 2.5 hours. Check occasionally and add more water if it is drying out. The fat should we well cooked through and the meat soft.
  5. Take the meat out of the oven and keep warm whilst you make the sauce.
  6. Strain off excess fat.
  7. Add the wine and mix the carmelised bits well into the sauce. Cook until reduced by half. Test for seasoning.
  8. Serve with your choice of vegetables
