Making seitan doesn't have to be difficult. This recipe is a good starting place. Not all gluten flours are the same: a lower gluten percentage will give you a softer texture. Even with a recipe, you might need to experiment a little.

Ingredients
  • 1 cup vital gluten flour
  • 0.33 cup nutritional yeast
  • 2 tsp chilli flakes
  • Spices (2 tsp ground cumin, 2 tsp smoked paprika, and 1 tsp ground coriander for a chorizo-style flavour; 1 tbsp fennel, 1 tbsp oregano, a handful of chopped olives for a Mediterranean twist)
  • 1 tsp black pepper
  • 0.75 cup cold water
  • 1 tsp stock powder (or a cube of mushroom stock for extra umami)
  • 2 tbsp tomato paste
  • 2 garlic cloves, crushed
  • 1 tbsp oil (something flavoured works well: sesame, or olive)
  • 1 tbsp soya sauce
Instructions
  1. Mix the dry ingredients in a bowl.
  2. Whisk the wet ingredients together in a measuring jug.
  3. Mix the wet ingredients with the dry and knead for a couple of minutes. The dough should be manageable but not so wet it runs through your fingers.
  4. Divide into four pieces, shape into sausages or rough squares.
  5. Wrap the seitan in foil (or or muslin).
  6. Steam for 45 minutes.
