Instant blinis: pancakes with a difference

- 40 cl (220 grams) buckwheat flour
- 50 cl soya milk
- Pinch of salt
- 1 tablespoon of baking powder

- Put the flour in a jug.
- Pour in the milk, bit by bit, and beat to a smooth batter.
- Add salt.
- Leave for half an hour.
- Just before cooking, add the baking powder.
- Cook on a hot pan, pour in about 25 - 50 cl per blini, depending on how big you want them.
- They will bubble a little. Fry on one side until it is set (no longer runny) and then turn over. A couple of minutes on either side is usually enough.
- Keep warm in a low oven (100C) while you cook up the rest of the batter.
