Pears poached sous vide

These pears poach in their own juices and are flavoured with mellow vanilla and warming cardamom. I served them with Greek yogurt loosened with some of the poaching liquid.

  • 2 dessert pears, peeled, halved and cored.
  • 4 table spoons sugar.
  • 0.5 vanilla pod.
  • 4 cardamom pods, cut open.
  • 1 star anise.
  1. Combine all ingredients in a vacuum pouch and seal.
  2. Sous vide at 70-75°C (the lower temperature for softer pears, the higher for harder) for 30-45 minutes. They should be soft, but al dente, when done.
  3. Cool and serve.
