Quick and easy desserts - Kerry's Drunken Apple and Sultana Crumble

A quick and easy dessert using Bramley apples, sultanas and PX sherry and crumble mix from the freezer

  • 2 Bramley apples
  • 2 TBS sultanas
  • 2 TBS Pedro Ximinez sherry
  • 1 TBS demerara sugar
  • Crumble mix (see above)
  1. In a small bowl, soak the sultanas in the Pedro Ximinez sherry for 15 minutes.
  2. Meanwhile peel and core the apples.
  3. Cut each apple into quarters and then into 1 cm cubes.
  4. Place some apple cubes in the bottom of 4 large ramekins or ovenware dishes.
  5. Sprinkle with demerara sugar.
  6. Store cupboard ingredients make the simplest of desserts

  7. Divide the PX soaked sultanas between the ramekins.
  8. Diced Bramley apple with PX soaked sultanas

  9. Top with some more apple.
  10. Finally top with some crumble mix and bake at 190C for 25-30 mins
  11. Boozy apple and sultana crumble with PX - serve with vanilla custard
