Instant blinis: pancakes with a difference
Quick and easy blinis made with buckwheat flour: no yeast needed.

  • 40 cl¬† (220 grams)¬†buckwheat flour
  • 50 cl soya milk
  • Pinch of salt
  • 1 tablespoon of baking powder

  2. Put the flour in a jug.
  3. Pour in the milk, bit by bit, and beat to a smooth batter.
  4. Add salt.
  5. Leave for half an hour.
  6. Just before cooking, add the baking powder.
  7. Cook on a hot pan, pour in about 25 - 50 cl per blini, depending on how big you want them.
  8. They will bubble a little. Fry on one side until it is set (no longer runny) and then turn over. A couple of minutes on either side is usually enough.
  9. Keep warm in a low oven (100C) while you cook up the rest of the batter.
