I was invited to take part in a focus group evaluating a new Scottish spirit. I’ve worked in marketing and am interested in product development – and spirits – so I accepted gladly.

Our first task was to try the standard expression and write down what we thought. Did we detect any particular botanicals? Did we like it? (And by the way, what do we normally drink?) It had a very delicate flavour, one that I couldn’t quite put my finger on. We tried two versions of the spirit with more or less botanicals and discussed bottles.

What was the spirit, and that elusive flavour? It was Highland Boundary’s birch and elderflower spirit. If everything goes to plan, it will be for sale in July.
